Watermelon Simple Syrup

I bought a mini watermelon at the farmer's market and when I got home I realized it still had seeds. Usually this isn't a problem since I love watermelon, but there were so many seeds I found it extremely hard to eat. I was wondering what I was going to do with this cut, uneaten watermelon, and thought about how great it would be as a syrup for pancakes or waffles. So, I found a simple syrup recipe online, and just added a few ingredients and it turned out great!

Ingredients:
1 mini watermelon
2 cups sugar
1/8 tsp ground ginger
1 tsp corn starch
1 tsp cold water

Directions:

  1.  Grate and deseed the watermelon, to collect only the juice and the pulp.
  2.  Put the watermelon juice/pulp, and the 2 cups of sugar into a 2 qt sauce pan and turn the heat to medium.
  3.  Bring the watermelon sugar mixture up to a boil and reduce to simmer, while stirring constantly. 
  4. Add the 1/8 tsp of ground ginger to the watermelon mixture, and on the side make a slurry with the corn starch and water (add the two in a small bowl and stir until smooth). Slowly add the slurry, while stirring constantly, until the cornstarch mixture is incorporated into the watermelon mixture.
  5. Continue to heat until the syrup is to the thickness you want it, and pull off of the heat. 
  6. Cool, and pour into sealed container for storing. Refrigerate.
