Ingredients:
1 mini watermelon
2 cups sugar
1/8 tsp ground ginger
1 tsp corn starch
1 tsp cold water
Directions:
- Grate and deseed the watermelon, to collect only the juice and the pulp.
- Put the watermelon juice/pulp, and the 2 cups of sugar into a 2 qt sauce pan and turn the heat to medium.
- Bring the watermelon sugar mixture up to a boil and reduce to simmer, while stirring constantly.
- Add the 1/8 tsp of ground ginger to the watermelon mixture, and on the side make a slurry with the corn starch and water (add the two in a small bowl and stir until smooth). Slowly add the slurry, while stirring constantly, until the cornstarch mixture is incorporated into the watermelon mixture.
- Continue to heat until the syrup is to the thickness you want it, and pull off of the heat.
- Cool, and pour into sealed container for storing. Refrigerate.
